Pulled and blown sugar showpiece with a green stem, orange flower and glass butterfly

Perfection was never the goal. Progress was. This sugar showpiece was created during my preparation for the International Three-Country Pastry Competition, and behind the finished piece are broken sugar, repeated attempts and countless small adjustments.

Building a sugar showpiece from the ground up

A sugar showpiece is architecture before it is decoration. The base has to carry the weight, the stem has to hold its curve, and every flower and leaf has to be attached at the right moment, while the sugar is warm enough to bond but cold enough to keep its shape.

  • Cast sugar for the base and the structural elements.
  • Pulled sugar for the stem, the leaves and the petals, worked until it shines like satin.
  • Blown sugar for volume, and fine poured sugar for the butterfly wings.

What every curve taught me

Every curve, every flower and every blown and pulled element taught me something about craftsmanship, technical skill, precision and perhaps most importantly, patience. Sugar does not forgive hurry. A piece that cracks after an hour of work is a lesson in temperature and humidity you will not forget.

Excellence is not a destination. It is a continuous pursuit.

Looking back

Today I can already see details I would approach differently, and that is a good thing. Growth comes from never being completely satisfied with yesterday's work. I am proud of how far this piece brought me, and even more excited for the next one. Read more about the competition itself on my about page.
